Lazy Leftover Turkey Pie
Whether it’s Thanksgiving, Christmas or a family gathering on a Sunday in February, if you’ve got a turkey chances are good you’ve got left overs and if you’ve got leftovers. That means you’ve got everything you need for my super easy Lazy Leftover Turkey Pie. I learn a lot from the women in my life and part of this pie recipe is a tip to use canned soup (gasp) as the base, that came from my dear Aunt Lisa who is also lovingly known as Nana in our house to my 4 kids.
This nut free recipe is quick and easy and a great way to stretch a little bit of turkey meat into another full meal with only a few extras. I love that turkey can be swapped out with chicken using chicken breasts or thighs or for a really fast meal, a roasted chicken from the grocery store. I always keep frozen pie shells on hand in the freezer just in case and of course, for lazy leftover turkey pie!

Ingredients
- 1 box frozen pie crust (2 per box)
- 1 can Chicken Corn Chowder soup any brand will do but I use Campbells Chunky Soups
- 2 cups chopped broccoli crowns steamed to your liking
- 2 cups chopped left over turkey meat light or dark meat, what ever you have
- 1/2 cup cranberry jelly
- 1 cup gravy what ever is left over

Instructions

Preheat oven to 350 degrees. In a medium bowl, combine soup, broccoli and turkey meat and mix.

Pour meat mixture into one pie crust

Carefully place second pie crust on top of meat mixture and gently pinch together the edges. (if the crusts have just come out of the freezer they may not pinch together well)

Using a fork, poke holes in the top of the pie to allow for steam to escape during baking.

Bake in preheated oven for approximately 45 minutes or until crust is golden brown and flakey when cut.

Cut and serve with cranberry jelly on the side and gravy poured over top (optional). This pie goes great with a salad or any left over veggies from the meal before. Mash potatoes, carrots, etc.
Recipe Notes
Tips for a great Lazy Leftover Turkey Pie:
Let the pie crusts thaw from the freezer a bit (outside the box) before using them for this recipe. It will allow for quicker cooking time and will be easier to pinch the top and bottom crusts together. As with any pie, an egg wash is also an option to seal the top and bottom as well as brushed over the whole top. But like the recipe says, this is a lazy pie 🙂Â
