Chewy Oatmeal Raisin Cookies
So being the awesome mom that I am, I ran out of school lunch snacks this week. You know the drill, life is busy, laundry is never ending, work projects take up all your time. It happens! Thankfully, I had all the ingredients in my pantry to make these Chew Oatmeal Raisin Cookies that work great in the lunch box as well as on the weekend. You can easily double this recipe if you need to feed a crowd.

Ingredients
- 1 cup salted butter softened
- 1 cup sugar
- 1/2 cup brown sugar packed
- 1 tsp vanilla
- 1 egg
- 1 1/2 cups all purpose flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 1/2 cups oats Quaker one minute oats or the like
- 2 cups raisins

Instructions

Preheat oven to 350F. Spray or grease cookie sheet and set aside.
In a large bowl or the bowl of your stand mixer (with paddle attachment) cream butter, white sugar, brown sugar and vanilla.

Once mixture is fluffy, add egg and combine.

In a separate bowl combine dry flour, cinnamon, baking soda and mix with a fork. Add dry mixture to mixing bowl gradually.

Fold in by hand or change out paddle attachment for dough hook on your stand mixer, oats and raisins.

Drop tablespoon size mounds onto prepared cookie sheet. 12 to a sheet.
Bake in oven for 12 minutes.
