Preheat oven to 350F. Spray or grease cookie sheet and set aside.
In a large bowl or the bowl of your stand mixer (with paddle attachment) cream butter, white sugar, brown sugar and vanilla.
Once mixture is fluffy, add egg and combine.
In a separate bowl combine dry flour, cinnamon, baking soda and mix with a fork. Add dry mixture to mixing bowl gradually.
Fold in by hand or change out paddle attachment for dough hook on your stand mixer, oats and raisins.
Drop tablespoon size mounds onto prepared cookie sheet. 12 to a sheet.
Bake in oven for 12 minutes.
Recipe Notes
For chewy cookies, check the oven at 10 and 11 minutes. Watch for golden edges and for the surface to look soft but not wet. Do not over cook or they’ll be crispy, unless that’s how you want them, who am I to judge. Either way, enjoy!
