Dirty Dishes: Thumbprint Jam Cookies and Netflix Giveaway
Oh it’s holiday baking time again! As a general practice I usually don’t bake a big batch of assorted treats and keep them on hand for the season. That’s just a recipe for me to binge eat ALL THE THINGS! So instead, I make a batch here and a batch there and make sure they get eaten by the kids within a day or so, of course, after I’ve had a good half dozen of them myself. Thumbprint Jam Cookies are a family treasure in my house. My mom had her recipe handed down to her and she then handed it down to me. I’ve made some modifications to put my own signature on it so that my kids will have my version of the recipe when they get older.
All parties start and end in the kitchen so I turned on my Periscope app and did another episode of #WorldsWorstCookingShow while I baked a batch of these yummy cookies. Much to my surprise several viewers had never heard of Thumbprint Jam Cookies much less knew how they were made so thank you to all my live viewers for letting me share this family recipe with you all.

Ingredients
- 1 cup butter room temp, soft
- 3/4 cup sugar
- 2 egg yolks
- 4-6 drops real lemon oil can sub for extract
- 1 tsp vanilla
- 2 cups flour
- 1/2 tsp salt
- your favourite jam I used raspberry

Instructions

Pre-heat oven to 375F
In a stand mixer with the paddle attachment, mix butter and sugar until fluffy on medium speed for aprox 3-4 minutes.
Add egg yolks, vanilla and lemon oil, mix to combine.
Add flour and salt slowly using a spoon to scoop into the mixer on low speed.
Mix just to combine. Dough will be crumbly but will hold together when squeezed into a ball. -
If the dough is too soft (warm) place the mixing bowl in the fridge for 45-60 minutes. Soft dough will spread out and flatten when cooking.

Using a teaspoon, scoop out dough into your hands. Roll into a ball and place on a greased cookie sheet. Once the cookie sheet is full, gently press your thumb into the centre of each ball, creating a dent about half way thru the cookie.

Bake for 8 minutes.
Remove cookie sheet from oven.
Using a teaspoon, scoop jam into the thumbprint whole in the centre of the cookie.
Return cookie sheet to oven.
Bake for 3-4 more minutes or until the cookies are just starting to golden around the edges.
Do not over cook.

Remove from cookie sheet right away and transfer to a cooling rack.
Store in an airtight container on the counter.Enjoy!

My favourite Christmas cookie would be shortbread. I love how many different styles that can be made. Just powdered icing or sprinkles or chocolate drizzled. They are so versatile. I love the way they seem to melt in my mouth too! They go great plain with a nice hot cup of tea, my fav!
