Slow Cooker Sweet And Sour Meatballs For Halloween Night
Halloween is my favourite holiday of the year. I love the excitement and all the scary decorations but I don’t love having to race to get the kids fed so we can dash out the door to start tick or treating. This year Halloween falls on a Monday, gross, so that means getting the kids home from school, feeding them, getting them dressed and back out the door before the sun sets. Slow cooker sweet and sour meatballs for Halloween night are the best answer because they can eat a few before they go out and if they’re still hungry, eat a few more after we get back from running around the neighbourhood. Another night where the slow cooker saves the day! Happy Halloween everyone!

Ingredients
- 1.5 lbs lean ground beef
- 1 egg
- 1/2 envelope dry onion soup mix
- 1 cup panko crumbs or any bread crumb you prefer
- 2/3 cup ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup brown sugar
- 1/3 cup water
- 2 tbsp cornstarch
- 1 cup cold water

In a medium mixing bowl, combine beef, egg, soup mix and panko crumbs

Using your hands, mix together until all ingredients are combined. Roll into balls (aprox 1 tbsp in size) and place in the bottom of a small/medium slow cooker.

Using the same bowl used to mix beef (no need to dirty another bowl), combine ketchup, vinegar, sugar and 1/3 cup water. Stir well. Pour into slow cooker over top of meat balls. Cover and cook on low for 4-6 hours or high for 2-4 hours or until meat balls are cooked thru.

30 minutes before serving, mix cornstarch with 1 cup of cold water in a cup or small bowl. Pour into slow cooker and stir. Return cover and let cook for the last 30 minutes until serving.

Serve over top of rice.
